Regular house/apartment doors have the key-locks on the "outside" of the door, so Penny would not be able to lock the mercs into their own apartment; the locking knob/button would never be on the "outer" or "hall" side of the door.
When MacGyver is trying to free his friends from the industrial freezer, the tight shots of MacGyver using his invented blow torch on the freezer door show at the bottom of the frame that there is a key inserted in the lock. (The wide shots show no key. And the storyline at this point assumes there is no key as MacGyver is trying to break the lock to get his friends out.)
When Vince hurls himself at the locked door to try to smash it open, the door flexes outward in the middle to a degree far past where the door's lock/latch would be, so the door should have flown open at that point, not stayed tightly stuck at the top and bottom of the door; obviously the door was being held at the top and bottom corners from the other side.
