I think I would have been happier just finishing after season 2 since season 3 just muddied the waters a bit and hurt the overall story (a lot). 5!3 series finale was terrible! The writers attempted to show some sort of redemption to Grace's character, but I don't think she necessarily needed any as the first two seasons painted a picture of a caring, hard-working woman who left far more good than bad in the world.
FWIW I'm an atheist and I loved the show. They left the idea of God up to your interpretation so probably anyone of any faith would still enjoy the story I think.
